Tomato chutney is a delicious condiment made from ripe tomatoes and a blend of spices. It is a popular accompaniment in Indian cuisine and can be served with various dishes like dosas, idlis, pakoras, or as a spread on sandwiches and wraps. Here's a simple recipe to make tomato chutney:
Ingredients:
- 4 ripe tomatoes
- 1 small onion, finely chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2-3 green chilies, chopped (adjust according to your spice preference)
- 1 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional, for extra heat)
- 1 tablespoon oil
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
1. Heat oil in a pan or skillet over medium heat.
2. Add mustard seeds and cumin seeds. Let them splutter.
3. Add chopped onions and sauté until they turn translucent.
4. Add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute.
5. Add turmeric powder and red chili powder (if using). Mix well.
6. Chop the tomatoes into small pieces and add them to the pan. Stir everything together.
7. Reduce the heat to low and cover the pan. Let the tomatoes cook for about 10-15 minutes until they become soft and mushy.
8. Remove the lid and continue cooking for another 5 minutes to evaporate any excess liquid.
9. Turn off the heat and let the mixture cool down to room temperature.
10. Once cooled, transfer the mixture to a blender or food processor and blend until smooth.
11. Return the chutney to the pan and simmer for a few minutes to bring out the flavors.
12. Season with salt to taste and mix well.
13. Remove from heat and let the chutney cool completely.
14. Garnish with freshly chopped coriander leaves.
15. Serve tomato chutney with your favorite dishes or store it in an airtight container in the refrigerator for up to a week.
