Tomato Khichdi is a popular Indian dish made with rice, lentils, and tomatoes. It's a flavorful and nutritious one-pot meal that is easy to prepare. Here's a simple recipe for Tomato Khichdi:
Ingredients:
- 1 cup basmati rice
- 1/2 cup split yellow moong dal (lentils)
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional)
- 1/2 teaspoon garam masala powder
- 1/4 cup chopped coriander leaves
- Salt to taste
- 3 cups water
- 2 tablespoons ghee (clarified butter) or oil
Instructions:
1. Rinse the rice and lentils separately under running water until the water runs clear.
2. Heat ghee or oil in a pressure cooker or a deep pan. Add cumin seeds and let them splutter.
3. Add chopped onions and green chilies. Sauté until the onions turn golden brown.
4. Add the chopped tomatoes and cook until they become soft and mushy.
5. Add turmeric powder, red chili powder (if using), and garam masala powder. Mix well.
6. Add the washed rice and lentils to the cooker or pan and stir well to combine with the tomato mixture.
7. Add water and salt to taste. Mix everything together.
8. If using a pressure cooker, close the lid and cook for 3-4 whistles on medium heat. If using a pan, cover and cook on low heat until the rice and lentils are cooked and tender (about 20-25 minutes), stirring occasionally.
9. Once the pressure is released from the cooker or the rice is cooked in the pan, open the lid and fluff the khichdi with a fork.
10. Garnish with chopped coriander leaves.
11. Serve the Tomato Khichdi hot with yogurt, pickle, or any side dish of your choice.
