Ingredients:
- 2 cups basmati rice
- 500 grams chicken, cut into pieces
- 2 onions, thinly sliced

- 1/2 cup plain yogurt
- 1/4 cup chopped mint leaves

- Whole spices (2 cinnamon sticks, 4 cloves, 4 green cardamom pods, 2 bay leaves)
- Salt to taste
Instructions:
1. Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
2. In a large pot, heat the ghee or vegetable oil over medium heat. Add the whole spices (cinnamon sticks, cloves, cardamom pods, and bay leaves) and sauté for a minute until fragrant.
3. Add the sliced onions to the pot and cook until they turn golden brown.
4. Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
5. Add the chicken pieces to the pot and cook until they are browned on all sides.
6. Add the chopped tomatoes and cook until they are soft and mushy.
7. Now, add the biryani masala powder and salt to taste. Mix well to coat the chicken and spices evenly.
8. Lower the heat and add the plain yogurt to the pot. Stir everything together and let it simmer for 5 minutes.
9. Add the soaked and drained rice to the pot, followed by the chopped mint and coriander leaves. Gently mix everything together.
10. Pour the water into the pot, ensuring that the water level is about 1 inch above the rice. Bring it to a boil.
11. Once it starts boiling, cover the pot with a tight-fitting lid and reduce the heat to low. Let it cook for about 15-20 minutes or until the rice is cooked and the chicken is tender.
12. Once the biryani is cooked, remove it from the heat and let it rest for 10 minutes.
