Kaju Katli is a popular Indian sweet made from cashew nuts. It is also known as Kaju Barfi. It is a diamond-shaped sweet that has a smooth and melt-in-your-mouth texture. Kaju Katli is widely enjoyed during festivals and special occasions in India, such as Diwali, Raksha Bandhan, and weddings.
Here's a traditional recipe for Kaju Katli:
Ingredients:
- 1 cup cashew nuts
- 1/2 cup sugar
- 1/4 cup water
- A few strands of saffron (optional)
- 1 tablespoon ghee (clarified butter)
- Silver vark (edible silver foil) for garnishing (optional)
Instructions:
1. Grind the cashew nuts in a food processor or grinder until they turn into a fine powder. Ensure not to over-grind, as the nuts can release their oils.
2. In a separate pan, add sugar and water. Heat the mixture on medium heat until the sugar dissolves completely, stirring occasionally.
3. Once the sugar syrup reaches a one-string consistency (when you take a drop of syrup between your fingers, it should form a single thread), add the cashew nut powder to the pan.
4. Stir the mixture continuously on low heat to avoid any lumps from forming. Add saffron strands at this stage if desired.
5. As the mixture thickens, add ghee and continue stirring. The mixture will start to leave the sides of the pan.
6. Remove the pan from heat and let the mixture cool slightly until it is warm enough to handle.
7. Grease your palms with ghee and knead the warm mixture gently to form a smooth dough-like consistency.
8. Roll the dough between two sheets of butter paper or greased parchment paper to achieve a desired thickness (usually around 1/4 inch).
9. While the rolled dough is still warm, cut it into diamond or square-shaped pieces.
10. Garnish each piece with a small square of silver vark, if desired.
11. Allow the Kaju Katli to cool completely before serving. Store them in an airtight container.
