Khava Barfi, also known as Khoya Barfi, is a popular Indian sweet made with khoya (also called mawa or khava), which is a thickened milk solid. It is a delicious and rich dessert that is often enjoyed during festivals, celebrations, and special occasions.
Here's a basic recipe for making Khava Barfi:
Ingredients:
- 2 cups khoya (mawa)
- 1 cup sugar
- 1/2 cup water
- 1/2 teaspoon cardamom powder
- A handful of chopped nuts (such as almonds, pistachios, or cashews)
- Ghee (clarified butter) for greasing the pan
Instructions:
1. Grease a plate or a square baking dish with ghee and set it aside.
2. In a heavy-bottomed pan, crumble the khoya/mawa and cook it on low heat until it melts and starts to turn light golden in color. Stir continuously to avoid burning.
3. In a separate pan, heat the water and sugar together to make a sugar syrup. Cook the syrup until it reaches a one-string consistency.
4. Add the sugar syrup to the melted khoya/mawa mixture and mix well. Keep stirring continuously to avoid lumps.
5. Continue cooking the mixture on low heat until it thickens and starts to leave the sides of the pan. This process may take around 15-20 minutes.
6. Once the mixture thickens, add the cardamom powder and chopped nuts. Mix well.
7. Pour the mixture into the greased plate or baking dish. Spread it evenly and smooth the surface with the back of a spoon or a spatula.
8. Allow the mixture to cool for a while. Then, using a sharp knife, cut it into square or diamond-shaped pieces.
9. Let the Khava Barfi cool completely and then remove the individual pieces from the plate.
10. Your delicious Khava Barfi is ready to be served. Enjoy!
Note: You can garnish the Khava Barfi with additional chopped nuts if desired. Store it in an airtight container at room temperature for a few days.
Please note that this is just one way to make Khava Barfi, and there may be variations in the recipe based on personal preferences and regional differences.
