Daal Dhokali is a traditional Indian dish that combines lentils (daal) with wheat flour dumplings (dhokali). It is a popular comfort food in the states of Gujarat and Rajasthan.

Here's a basic recipe for making Daal Dhokali:

Ingredients:

- 1 cup split pigeon peas (toor daal)

- 1 cup wheat flour

- 1 onion, finely chopped

- 2 tomatoes, chopped

- 2 green chilies, slit lengthwise

- 1 teaspoon ginger-garlic paste

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon garam masala

- A pinch of asafoetida (hing)

- Few curry leaves

- Coriander leaves, chopped for garnishing

- Salt to taste

- Water as needed

- Oil for cooking

Instructions:

1. Rinse the split pigeon peas (toor daal) thoroughly and soak them in water for about 30 minutes.

2. In a pressure cooker, add the soaked and drained daal along with 3 cups of water. Add salt and turmeric powder. Pressure cook for about 3-4 whistles or until the daal becomes soft and mushy.

3. Meanwhile, in a mixing bowl, add wheat flour, salt, red chili powder, and a tablespoon of oil. Mix well and knead it into a smooth dough using water as needed.

4. Take a small portion of the dough and roll it out into a thin circle. Cut the rolled dough into small diamond or square-shaped pieces (dhokali).

5. In a separate pan, heat oil and add mustard seeds. Allow them to splutter, then add cumin seeds, asafoetida, curry leaves, green chilies, and ginger-garlic paste. Sauté for a minute.

6. Add chopped onions and cook until they turn golden brown. Then, add chopped tomatoes and cook until they become soft and mushy.

7. Add turmeric powder, red chili powder, and garam masala. Mix well.

8. Add the cooked daal to the pan and bring it to a boil. Adjust the consistency by adding water if required.

9. Once the daal starts boiling, carefully add the prepared dhokali pieces into the pan. Stir gently to prevent sticking.

10. Cover the pan and let it cook on medium heat for about 10-15 minutes or until the dhokali pieces are cooked through.

11. Garnish with chopped coriander leaves and serve hot.

Daal Dhokali is typically enjoyed as a one-pot meal on its own, but you can also serve it with rice or Indian bread like roti or paratha. It's a hearty and flavorful dish that is sure to satisfy your taste buds. Enjoy!
