Kadu ki kheer is a delicious Indian dessert made with grated bottle gourd (also known as kadu or lauki), milk, sugar, and flavored with cardamom and nuts. It is a popular sweet dish prepared during festivals or special occasions in many Indian households. Here's a basic recipe for kadu ki kheer:

Ingredients:

- 2 cups grated bottle gourd (kadu/lauki)

- 4 cups milk

- 1/2 cup sugar (adjust to taste)

- 4-5 green cardamom pods, crushed

- A handful of chopped nuts (such as almonds, pistachios, and cashews)

- A few strands of saffron (optional)

- Ghee (clarified butter) for frying the nuts

Instructions:

1. Heat ghee in a pan and fry the chopped nuts until golden brown. Remove them from the pan and set them aside for garnishing later.

2. In the same pan, add the grated bottle gourd and sauté for a few minutes until it becomes soft and the raw smell disappears.

3. In a separate heavy-bottomed saucepan, bring the milk to a boil.

4. Add the sautéed bottle gourd to the boiling milk and let it simmer on low heat, stirring occasionally.

5. Allow the mixture to cook until the bottle gourd is completely cooked and the milk reduces to a thick consistency. It may take around 20-30 minutes.

6. Add sugar, crushed cardamom, and saffron strands (if using). Stir well to combine and let it simmer for another 5 minutes.

7. Turn off the heat and allow the kheer to cool down slightly.

8. Garnish with the fried nuts prepared earlier.

9. Serve kadu ki kheer warm or chilled, as per your preference.
