Ingredients of Marwadi kadhi | Rajasthani kadhi

Marwadi Kadhi is a popular traditional dish from the Marwar region of Rajasthan, India. It is a tangy yogurt-based curry that is thickened with gram flour (besan) and seasoned with spices. Here's a recipe for Marwadi Kadhi:

Ingredients:

- 1 cup yogurt (preferably sour)

- 3 tablespoons gram flour (besan)

- 2 cups water

- 1 teaspoon cumin seeds

- 1/2 teaspoon fenugreek seeds (methi)

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- Salt to taste

- 2 tablespoons oil or ghee

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon asafoetida (hing)

- Curry leaves (a few)

- 2-3 dry red chilies

- Chopped coriander leaves for garnishing

Instructions:

1. In a mixing bowl, whisk the yogurt until smooth. Add gram flour (besan), turmeric powder, red chili powder, and salt. Mix well to form a smooth paste.

2. Heat oil or ghee in a deep pan or kadhai over medium heat. Add cumin seeds and fenugreek seeds. Let them splutter.

3. Add asafoetida (hing), mustard seeds, curry leaves, and dry red chilies. Saute for a few seconds until the spices release their aroma.

4. Reduce the heat to low and slowly add the yogurt-gram flour mixture to the pan, stirring continuously to avoid lumps.

5. Add water and mix well to combine. Increase the heat to medium and bring the mixture to a boil, stirring occasionally.

6. Once the kadhi comes to a boil, reduce the heat to low and simmer for about 15-20 minutes, stirring occasionally. This will allow the flavors to develop and the kadhi to thicken.

7. Taste and adjust the seasoning if needed. If the kadhi is too thick, you can add more water to achieve the desired consistency.

8. Garnish with chopped coriander leaves and remove from heat.

9. Serve Marwadi Kadhi hot with steamed rice or roti.

Marwadi Kadhi is known for its tangy and spicy flavors. It is a comforting and delicious dish that can be enjoyed as a main course or as a side dish with other Rajasthani delicacies.
