Here's a simple recipe to make onion pakodas:

ingredients:

- 2 large onions, thinly sliced

- 1 cup gram flour (besan)

- 2 tablespoons rice flour

- 1 teaspoon red chili powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon ajwain (carom seeds)

- Salt to taste

- Oil for deep frying

- Water (as needed)

- Fresh coriander leaves (optional, for garnish)

Instructions:

1. In a large bowl, add gram flour, rice flour, red chili powder, turmeric powder, cumin seeds, ajwain, and salt. Mix everything well.

2. Add the thinly sliced onions to the bowl and mix them with the flour mixture, ensuring that the onions are coated evenly.

3. Gradually add water to the mixture, little by little, and mix well until you achieve a thick batter consistency. The batter should coat the onions well.

4. Heat oil in a deep pan or kadhai over medium heat for frying.

5. Once the oil is hot, drop small portions of the onion batter into the oil using your fingers or a spoon. Be careful not to overcrowd the pan.

6. Fry the pakodas until they turn golden brown and crispy. Flip them occasionally to ensure even cooking.

7. Once done, remove the pakodas using a slotted spoon and place them on a kitchen towel or paper towel to absorb any excess oil.

8. Repeat the process with the remaining batter and onions until all the pakodas are fried.

9. Garnish with fresh coriander leaves if desired.

10. Serve hot onion pakodas with mint chutney, tamarind chutney, or tomato ketchup.
