New Mexican Flat Enchiladas | Ingredients of New Mexican Flat Enchiladas | Recipe For New Mexican Flat Enchiladas
New Mexican flat enchiladas, also known as stacked enchiladas or enchiladas montadas, are a traditional dish from the New Mexico region of the United States. While traditional enchiladas are typically rolled, New Mexican flat enchiladas are assembled in layers and stacked on top of each other.
Here's a recipe for New Mexican flat enchiladas:
Ingredients:
- 12-16 corn tortillas
- 2 cups cooked and shredded chicken or beef
- 2 cups shredded cheese (cheddar, Monterey Jack, or a combination)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups red or green enchilada sauce
- Salt and pepper to taste
- Optional toppings: chopped lettuce, diced tomatoes, sliced black olives, sour cream, chopped cilantro
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a skillet, sauté the diced onion and minced garlic until they become translucent and fragrant.
3. Add the shredded chicken or beef to the skillet and season with salt and pepper. Cook for a few minutes until heated through.
4. In a separate saucepan, warm the enchilada sauce over low heat.
5. Take a baking dish and spread a small amount of the enchilada sauce on the bottom to prevent sticking.
6. Place a layer of corn tortillas on top of the sauce, overlapping them slightly to cover the bottom of the dish.
7. Spoon some of the shredded meat mixture on top of the tortillas, followed by a sprinkle of shredded cheese. Repeat this process to create multiple layers, ending with a layer of tortillas.
8. Pour the remaining enchilada sauce over the stacked enchiladas, making sure to cover them evenly.
9. Sprinkle the remaining shredded cheese on top.
10. Cover the baking dish with aluminum foil and bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
11. Remove the foil and bake for an additional 5 minutes to allow the cheese to brown slightly.
12. Once done, remove the enchiladas from the oven and let them cool for a few minutes.
13. Serve the New Mexican flat enchiladas hot, garnished with optional toppings like chopped lettuce, diced tomatoes, sliced black olives, sour cream, and chopped cilantro.
Enjoy your delicious New Mexican flat enchiladas!
