Saag Roti is a popular dish in North Indian cuisine. It consists of a flavorful spinach-based curry (saag) served with roti, which is a type of unleavened bread. Here's a simple recipe for Saag Roti:
Ingredients for Saag:
- 500 grams spinach leaves, washed and chopped
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- Salt to taste
Ingredients for Roti:
- 2 cups whole wheat flour
- Water (as needed)
- Ghee or oil (for cooking)
Instructions for Saag:
1. Heat ghee or oil in a large pan or pot over medium heat.
2. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until they turn translucent.
4. Add ginger-garlic paste and cook for a minute until the raw smell disappears.
5. Add chopped tomatoes and green chilies. Cook until the tomatoes soften.
6. Add turmeric powder, red chili powder, and salt. Mix well.
7. Add the chopped spinach leaves to the pan. Stir well to combine with the spices.
8. Cover the pan and let the spinach cook on low heat for about 10-15 minutes until it wilts down and becomes tender.
9. Once the spinach is cooked, use a hand blender or a traditional blender to blend the mixture until you achieve a smooth consistency. Alternatively, you can keep it chunky if you prefer.
10. Return the blended mixture to the pan. Add garam masala powder and adjust the seasoning according to your taste.
11. Simmer for a few more minutes to let the flavors meld together.
Instructions for Roti:
1. In a mixing bowl, combine whole wheat flour and a pinch of salt.
2. Gradually add water and knead the dough until it becomes smooth and elastic.
3. Divide the dough into small balls.
4. Roll each ball into a circular shape using a rolling pin and a lightly floured surface.
5. Heat a tawa or griddle over medium-high heat. Place the rolled roti on the hot tawa.
6. Cook until bubbles start to form on the surface, then flip it over.
7. Apply ghee or oil on the cooked side and cook the other side until golden brown.
8. Repeat the process for the remaining dough balls.
To serve, place a portion of the saag in a bowl and serve it with hot rotis. You can also garnish the saag with a dollop of butter or cream for added richness. Enjoy your Saag Roti!
