Ingredients:
- 1/2 cup semolina (rava)
- 4 cups milk
- 1/2 cup sugar (adjust according to taste)
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- 2 tablespoons ghee (clarified butter)
- Assorted nuts (almonds, cashews, pistachios) for garnishing
ingredients:
1. Heat ghee in a heavy-bottomed pan or kadai over medium heat.
2. Add semolina (rava) to the pan and roast it on low heat until it turns light golden brown. Stir continuously to prevent burning.
3. In a separate saucepan, heat the milk over medium heat until it comes to a boil.
4. Once the milk starts boiling, reduce the heat to low and add the roasted semolina to it slowly, stirring continuously to avoid lumps.
5. Cook the mixture on low heat for about 10-12 minutes until the rava is cooked and the kheer thickens.
6. Add sugar and mix well until it dissolves completely. Continue to simmer for another 5 minutes.
7. Add cardamom powder and saffron strands (if using), and mix well.
8. Remove the pan from heat and let the kheer cool for a few minutes.
9. Garnish with assorted nuts and serve warm or chilled.
Rava kheer is ready to be enjoyed as a delightful dessert! You can serve it as is or refrigerate for a few hours to enjoy it chilled.
