- 1/2 cup water

Instructions:
1. Heat the vegetable oil in a pan or a pot over medium heat. Add the cumin seeds and let them splutter.
2. Add the finely chopped onions and sauté until they turn translucent.
3. Add the minced garlic, grated ginger, and chopped green chilies. Sauté for a couple of minutes until the raw smell disappears.
4. Add the chopped tomatoes along with salt, turmeric powder, red chili powder, ground coriander, and ground cumin. Cook the tomatoes until they become soft and the oil starts to separate from the masala.
5. Now, add the diced potatoes and green peas to the pan. Mix them well with the masala.
6. Pour in the water, cover the pan, and let it simmer on low heat until the potatoes and peas are cooked through. Stir occasionally to avoid sticking to the bottom of the pan. If the mixture becomes too dry during cooking, you can add a little more water.
7. Once the potatoes and peas are cooked, add garam masala and adjust salt and spices according to your taste preferences. You can also add a little sugar to balance the flavors if desired.
8. Garnish with freshly chopped coriander leaves.
9. Serve hot with roti, naan, or steamed rice.
