Dahi Bade, also known as Dahi Vada, is a popular Indian snack that consists of lentil fritters soaked in spiced yogurt and garnished with various chutneys and spices. It is a refreshing and flavorful dish, especially enjoyed during hot summer months.

Here's a basic recipe for making Dahi Bade:

Ingredients:

- 1 cup urad dal (split black lentils)

- 1/2 teaspoon ginger paste

- 1/2 teaspoon green chili paste

- Salt to taste

- Oil for deep frying

- 2 cups thick yogurt (curd)

- 1/2 teaspoon roasted cumin powder

- 1/2 teaspoon red chili powder

- 1/4 teaspoon black salt

- Tamarind chutney and green chutney (optional)

- Chopped coriander leaves for garnish

Instructions:

1. Soak the urad dal in water for about 4-5 hours. Drain the water and grind the dal to a smooth paste, adding a little water if needed.

2. Add ginger paste, green chili paste, and salt to the dal paste. Mix well.

3. Heat oil in a deep pan for frying.

4. Take small portions of the dal mixture and drop them into the hot oil. Fry until they turn golden brown and crisp.

5. Remove the fried vadas from the oil and drain them on a kitchen towel to remove excess oil.

6. In a separate bowl, whisk the yogurt until smooth. Add a little water if needed to achieve a pouring consistency.

7. Soak the fried vadas in warm water for a couple of minutes to make them soft.

8. Squeeze out the water from the vadas and place them in a serving dish.

9. Pour the whisked yogurt over the vadas, ensuring they are fully covered.

10. Sprinkle roasted cumin powder, red chili powder, and black salt over the yogurt.

11. Optionally, you can drizzle tamarind chutney and green chutney over the dahi bade for added flavor.

12. Garnish with chopped coriander leaves.

13. Serve chilled and enjoy!

Note: You can adjust the spices and chutneys according to your taste preferences. Some people also like to sprinkle chaat masala and sev (crispy chickpea noodles) on top for extra crunch and flavor.
