Daal Tadka is a popular Indian dish made with lentils (daal) and flavored with a tempering of spices (tadka). It is a simple yet delicious dish that is commonly enjoyed with rice or roti (Indian bread). Here's a basic recipe for Daal Tadka:

Ingredients:

- 1 cup yellow lentils (toor daal), washed and soaked for 30 minutes

- 3 cups water

- 1 medium-sized onion, finely chopped

- 2 medium-sized tomatoes, finely chopped

- 2-3 green chilies, slit lengthwise

- 1 teaspoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- Salt to taste

- 1 tablespoon ghee (clarified butter) or oil

- 1 teaspoon cumin seeds

- A pinch of asafoetida (hing)

- 4-5 garlic cloves, minced

- 1 teaspoon mustard seeds

- A handful of fresh coriander leaves, chopped

- Juice of half a lemon

Instructions:

1. Drain the soaked lentils and transfer them to a pressure cooker. Add water, chopped onions, tomatoes, green chilies, ginger-garlic paste, turmeric powder, red chili powder, and salt.

2. Close the pressure cooker and cook the lentils on medium heat for about 4-5 whistles or until the lentils are soft and mushy.

3. Once the pressure releases naturally, open the cooker and give the lentils a good stir. If the consistency is too thick, you can add a little water to adjust it.

4. In a small pan, heat ghee or oil over medium heat. Add cumin seeds and let them splutter. Then add asafoetida, minced garlic, and mustard seeds. Fry until the garlic turns golden brown and the mustard seeds start crackling.

5. Pour this tempering over the cooked lentils and mix well. Simmer the daal on low heat for a few minutes to allow the flavors to meld together.

6. Finally, garnish the daal tadka with freshly chopped coriander leaves and squeeze in the lemon juice for a tangy flavor.

7. Serve hot with steamed rice or roti.
