Gobhi paratha is a popular Indian flatbread made with a stuffing of spiced cauliflower (gobhi) and cooked on a griddle or tawa. It is a delicious and satisfying dish that can be enjoyed for breakfast, lunch, or dinner. Here's a simple recipe to make gobhi paratha:
Ingredients:
- 2 cups whole wheat flour
- 2 cups finely grated cauliflower (gobhi)
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 teaspoon grated ginger
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped
- Ghee or oil for cooking
Instructions:
1. In a mixing bowl, combine the whole wheat flour with a pinch of salt. Gradually add water and knead the dough until it becomes smooth and pliable. Cover the dough and let it rest for 15-20 minutes.
2. In the meantime, prepare the stuffing. Heat a teaspoon of oil or ghee in a pan over medium heat. Add the cumin seeds and let them splutter. Then add the chopped onions, green chilies, and grated ginger. Sauté until the onions turn translucent.
3. Add the grated cauliflower to the pan and mix well. Add turmeric powder, red chili powder (if desired), garam masala, and salt to taste. Cook the cauliflower mixture for 4-5 minutes until it becomes tender and any moisture evaporates. Remove from heat and let it cool.
4. Divide the dough into small lemon-sized balls. Take one dough ball and flatten it with your hands. Dust it with flour and roll it into a small disc of about 4-5 inches in diameter.
5. Place a spoonful of the cooled cauliflower stuffing in the center of the rolled disc. Bring the edges of the disc together to seal the stuffing inside and form a ball again.
6. Flatten the stuffed ball with your hands and dust it with flour. Roll it gently into a paratha of about 6-7 inches in diameter. Be careful not to put too much pressure while rolling, as it may break and the stuffing could come out.
7. Heat a tawa or griddle over medium-high heat. Place the rolled paratha on the hot tawa and cook for about a minute until small bubbles start to appear on the surface.
8. Flip the paratha and spread some ghee or oil on the cooked side. Flip again and spread ghee or oil on the other side. Press the edges of the paratha with a spatula to ensure even cooking.
9. Cook the paratha until both sides turn golden brown and crispy. Remove from heat and repeat the process with the remaining dough balls and stuffing.
10. Serve the gobhi parathas hot with yogurt, pickle, or any chutney of your choice. You can also enjoy them with a side of raita (yogurt sauce) or a cup of hot tea.
