Here's a basic recipe for Sev Tamatar Nu Shaak:

Ingredients:

- 2 cups ripe tomatoes, finely chopped

- 1/2 cup sev (thin or thick, as per preference)

- 1 tablespoon oil

- 1 teaspoon cumin seeds

- 1/4 teaspoon asafoetida (hing)

- 1 teaspoon ginger paste

- 1 teaspoon green chili paste (adjust to taste)

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala

- Salt to taste

- Fresh coriander leaves, chopped (for garnish)

Instructions:

1. Heat oil in a pan or kadai over medium heat. Add cumin seeds and let them splutter. Then add asafoetida and stir for a few seconds.

2. Add ginger paste and green chili paste to the pan. Saute for a minute until the raw aroma of the paste disappears.

3. Add the finely chopped tomatoes to the pan and mix well. Cook the tomatoes until they become soft and mushy, stirring occasionally.

4. Once the tomatoes are cooked, add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and let the spices cook for a minute.

5. Add a little water (around 1/2 cup) to the pan to adjust the consistency of the curry. Simmer for a few minutes until the flavors blend together and the curry thickens slightly.

6. Taste the curry and adjust the seasonings if needed.

7. Remove the pan from heat and garnish the curry with fresh coriander leaves.

8. To serve, place a portion of the tomato curry in a serving dish and top it generously with sev.

9. Serve Sev Tamatar Nu Shaak hot with roti or puri.

Note: You can adjust the spiciness of the curry by adding more or less red chili powder and green chili paste according to your taste preferences. Additionally, you can also add a pinch of sugar to balance the tanginess of the tomatoes if desired.
